SABZI AUR TOMATO KA PULAO

Basmati rice -------1 1/2 cups
Onions 2 medium sized
ghee 3 tblspns
cumin seeds I tspn
green cardamom 3-4
Large cardamom 3-4
Cinnamon I onc inch stick
Cloves 4-6
Water  3 cups
Tomatoes 3-4
Cauliflower cut into florets ....3/4 cup
Carrots 2 small sized
French beans 10-12
Shelled green peas 1/2 cup
Salt .. as per taste

INGREDIENTS

METHOD OF PREPARATION
1 Wash and soak the rice in water for an hour.
2.Peel and slice onions. Wash and chop tomatoes and keep aside.
3.Peel carrots and dice them into half inch cubes. String beans and cut them
into half inch sized pieces.
4.Heat ghee in a thick-bottomed pan, add cumin seeds, green cardamom,
large cardamom, cinnamon and cloves. Once they start to crackle, add sliced onions and cook till onions become translucent.
5.Add chopped tomatoes and cook till oil can be seen on the sides of the pan.
Add three cups of water and bring to a boil. Add carrots and cook for five minutes.
6.Drain excess water from rice and add rice to the pan. Once it starts to boil,
add green peas, cauliflower florets, diced beans and salt. Reduce the heat
and cover the pan. Cook till rice is completelv done.
7.When the rice is cooked, open the pulao, and lightly stir with a spatula so
as to ensure that no lumps are formed.
