GOBHI MUSSALLAM

INGREDIENTS 

Cauliflower (small sized) .2 
Cumin powder . I tspn 
Red chilli powder . I tblspn 
Coriander powder . I tblspn 
Garam masala powder 
Tomato puree 1/2 cup 
Salt .......as per taste 
I tspn 
Turmeric powder 1/2 cup 
Onions 2 medium sized 
Melon seeds 1/2 cup + I tspn 
Oil . .3 tblspns 
Ginger paste I tblspn 
Garlic paste I tblspn 
Mawa (khoyø)1/2 cup 
Fresh cream 1/2 cup 
Chopped coriander leaves ....2 tblspns 


METHOD OF PREPARATION 

1. Remove stalks from cauliflower. Boil cauliflower in salted water with 1/2 tspn turmeric powder till half cooked. Peel onions and grate them. Soak 
1/2 cup melon seeds in water for an hour and grind to a smooth paste. 
2. Heat oil in a kadai. Add grated onions and sauté until golden brown in 
colour. 
3 Add ginger paste, garlic paste, cumin powder, red chilli powder, coriander  
powder, remaining turmeric powder, garam masala powder and salt. Stir 
for half a minute. 
4.Add tomato puree and cook till oil leaves the masala. Add melon seed 
paste dissolved in I cup of water. Bring to a boil. Add mawa. Mix well. 
5.Add half-boiled cauliflower and cook covered on low heat or in a pre-heated 
oven for fifteen minutes. Top with fresh cream and simmer for five minutes 
6.Serve hot, garnished with chopped coriander leaves and melon seeds.
